These yummy little morsels are a great for when guests come over for a cuppa or just as a sometimes treat. Super easy to make takes less than 20 minutes. You could even have them baking away in the oven before friends arrive, creating a delicous warming scent throughout the house…mmmmm

GINGER is GREAT for you! It has anti-inflammatory properties, helps with chills and congestion symptoms from colds and flus. Also aids in alleviating and settling nausea and vomiting. So why not add some fresh grated GINGER into these gorgeous cookies!
Finely grate ginger and add to the wet mix.
Note: If you have high or low blood pressure, bleeding disorders or on blood thinners
Consult your health care professional before using alot of ginger.
• 3c Almond Meal
• 2 tsp Baking powder
• 1 tsp Sea Salt
• ¾ c Cacao chips or dark choc chips
• Optional – roasted macadamia’s (or any nut really)
Mix all dry ingredients together
• 180 ml of Coconut Oil (Melted)
• 6 Tbl of Maple syrup or honey (sometimes I go half/half)
• 3 Tbl of Almond Milk or Coconut
• 1 vanilla bean
Mix together wet ingredients, whisk until fully mixed into a thick gel.
Fold the dry and wet ingredients into each other to form a stiff cookie dough paste.Scoop into balls about the 4cm in diameter, roll and push down onto a tray lined with baking paper.
Bake in oven at 160c’ for 20-25 minutes
Gobble them all up straight away….. Just kidding. You can store these cookies in a container for a week on the bench or up to a month in the fridge, trust me they won’t even last the week!
